Fannetastic burger!

How about adding some seasonal flavor to your regular veggie burger? Adding pumpkin to the mix will give you a fall flair, and will make your veggie burger even more comforting and festive...
Ingredients 1/2 cup pumpkin puree 2 tablespoons olive oil 1/2 of hot pepper 2 garlic cloves 1 small onion 2 teaspoons cumin 1 teaspoon sea salt 1 cup old fashioned, rolled oats 1–14 ounce can black beans, drained and rinsed, divided
1/4 smoked paprika
1/4 Cilantro and parsley combined Buns and toppings Instructions I used my air fryer for this and it is amazing, but you could preheat the oven to 325°. Line a baking sheet with parchment paper. Set aside. In the bowl of a food processor, pulse together the pumpkin puree, olive oil, hot pepper , garlic cloves, onion, cumin, salt, oats, smoked paprika, Cilantro and parsley and half of the black beans until mostly smooth. You might have to scrape the sides a few times to get it really blended together. Add in the remaining black beans, and pulse until just slightly chopped. Form the mixture into four large patties. The mixture will be soft, so wet hands with help to keep it from sticking while you form the patties, I placed the mixture in the fridge for 30 minutes and that gave me a firmer mix . Place the patties on the prepared baking sheet and bake in preheated oven for 40-45 minutes, or until the top of the patties look golden brown and are beginning to crack. Serve on buns topped with your favorite burger toppings.
If you have an air fryer, start at 325 for about 7-8 minutes and another 5 on 350,until the top of the patties look golden brown and are beginning to crack.
Dress it up with red peppers, tomatos, lettuce, avocado , cheese , turkey bacon , anything you’ll desire, serve it over a bun , crumble it over a salad, no matter what you pick and choose it is completely irresistible. Go ahead and take a bite. You will be happy you did!
